Instructions

  1. Make the Candy Base:
    In a medium saucepan, combine sugar, corn syrup, water, and cream of tartar. Heat gently over medium heat, stirring until sugar dissolves.
    Attach a candy thermometer to the pan and increase the heat. Allow the mixture to boil without stirring until it reaches 300°F (hard-crack stage).
  2. Add Flavor and Color:
    Remove the saucepan from heat. Stir in the vanilla extract and optional flavoring.
    Divide the hot candy mixture into separate bowls (one per color). Add a few drops of gel food coloring to each bowl and stir gently.
  3. Create the Northern Lights Effect:
    Pour the colored mixtures onto the prepared baking sheet in overlapping sections.
    Use a toothpick to swirl the colors together, creating a radiant aurora-like design. Add edible glitter or shimmer dust for an extra glow.
  4. Cool and Break:
    Let the candy cool completely until hardened.
    Break into shards or cut into desired shapes.
